Spanish Omelet

6-7 small potatoes

2 cups of olive oil

1 medium yellow sweet onion

1-1/2 tablespoon sour cream

5 large eggs

Sea salt and ground pepper to taste

1/4 cup leeks

1/2 cup of Mexican 4-cheese mixture


1/4 cup green onions to garnish


1. Preheat oven at 325 degrees
2. Cut peeled potatoes in half lengthwise, and slice to 1/8” thick
3. Chop onion in 1/4" pieces
4. Mix potatoes and onions in large bowl, salt and pepper to taste
5. Place potatoes and onions in nonstick pan heated with olive oil, turn heat down to simmer, and cook until potatoes are fully cooked
6. Remove potato and onion mixture, and set aside while oil drains
7. Whisk eggs, ground pepper, and sour cream
8. Place whisked eggs into non-stick pan lightly drizzled with olive oil, cooking until underside of omelet is lightly brown
9. Place potato and onion mixture, and leeks onto one side of omelet, sprinkle Mexican cheese, and place in oven for 5-1/2 minutes
10. Remove omelet from oven, fold in half over the ingredients, garnish with green onions, serve on your favorite plating or French bread, and bon appetit!
